The present utility model relates to food technology specifically, an instant iron-fortified rice kernel produced by extrusion processing. It is comprised of 95-99 wt% rice flour, 0.1-1.0 wt% vegetable oil, 0.1-1.0 wt% gum arabic, 0.01-0.1% citric acid, 0.1-1.0% iron premix rice powder, and water (q.s.). The present utility model provides for a rice that does not require cooking, while also fortified with iron and with low acrylamide content. This will be beneficial to children and pregnant women, especially in scenarios wherein there is lack of rice due to natural disasters.
